My Broth Bowl Obsession

Broth Bowl
I know I talked soup in the last post, but this is different.

Soup is something you make a pot of.  A Broth Bowl is a spontaneous, nutritious gift that you and your leftovers whip up on the fly.  And oh my…is it becoming my latest obsession!

OK – so it’s not ALL leftovers.

Fresh Additions:

A few stalks of asparagus
Baby bok choy
Garlic
Fresh ginger & turmeric root
Beet greens
Arugula (gotta get my peppery flavor SOMEWHERE)
Mushrooms

Left Overs:

Grilled lemon-ginger chicken (from the freezer)
Roasted Carrots & Turnips

I ALWAYS INCLUDE a Tablespoon of Collagen.  I use this one right now because it’s the first one I bought.  I’m excited to try this one that doesn’t gel in cold liquids.  I you have a favorite, please put it in the comments and let me know how you use it :).

And CONFESSION…it’s not chicken bone broth.  I’m using up the last of my organic chicken broth-in-a-box.  BUT…I’ve got a huge crock pot of chicken bone broth simmering for future bowls.

chicken bone brothHonestly, I don’t know how I’m ever going to get to the 8-14 cups of vegetables per day that The Paleo Mom recommends, but this broth bowl had 2 1/2 -3 cups and I…Am…FULL!
